Brewer: Neal Cameron from the Australian Brewery in NSW
What beer are you making for GABS?
We’re doing a take on the traditional German Eisbock and making an Golden EisBock with our pilsner as the starting point. Sure you know that this is a normal lager which is matured for an extended period and then frozen to concentrate all the malty hoppy goodness into a relatively formidable 10.5% beer. Really tricky to make well as whilst the process concentrates all the good stuff, it can also concentrate any bad stuff too. Fortunately as you know we know a thing or two about producing clean pilsners so we’re pretty confident it’s going to come out rather special.
What’s it called?
Ice Ice Baby – no guessing the average age of the brewing team…
Where did the inspiration come from?
We love pilsners as you know and wanted to do the usual GABS thing of turning everything up to 11, hence the Golden EisBock.
Tell us why you have chosen to brew a Festival Beer for GABS
Because we want to know if we can brew a great Eisbock and this is surely the best place to do it!
Finish this sentence – one thing I would like to change about craft beer is …
get people to understand that craft lagers are just as brilliant as craft ales.
