What beer are you making for GABS?
A sour porter aged in oak with brettanomyces and black Doris plums.
What’s it called?
Black Doris, Bam’ba’Lambic (Pucker Up Range)
Where did the inspiration come from?
Been tasting some seriously good sour beers over the last few years and wanted to make something similar. The idea of this beer is to create a nice fruit sour without the overt ‘‘dryness’’ that a lot of them bring. Thought Black Doris plums would go really well with our imperial porter, and a good lashing of sour would really create an awesome complexity for this beer.
For those who might over-indulge, do you have a suggestion for a post-GABS hangover remedy?
Empty a hot mash tun (from the top with a bucket, the way we do every brew day). Then something involving pulled pork and imperial IPA.
